This is a simple chocolate cake, prepared using sweetened condensed milk and Soda (Yep!). No eggs or milk, so it’s a great recipe for people who don’t like dairy products. You can substitute almost all of the butter (up to 3/4th the required quantity) with apple sauce to cut down on the calories. No extra sugar required, since the sweetened condensed milk is sweet enough. You could add extra sugar if you feel like, of course.
Ingredients:
2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
4 tbsp cocoa (unsweetened)
3/4 cup aerated soda (Pepsi or Coke)
1 tsp vanilla essence
1 cup butter (I substituted this with 3/4 cup unsweetened apple sauce + 1/4 cup butter)
1 can (14 oz) sweetened condensed milk
Instructions:
1. Preheat over at 350F. Grease and flour a round 8 or 9” baking pan (I used a 9” baking pan)
2. Sieve the all purpose flour, baking powder, baking soda and cocoa
3. In a separate dish, melt the butter, add sweetened condensed milk and mix well. Add vanilla essence to the mixture
4. Add the all purpose flour mixture and the soda (Pepsi/Coke) alternately to the butter mixture. Stir the mixture really well and then transfer it to the baking pan.
5. Bake for 30-35 mins in the pre-heated oven.
Optional: You can prepare your favorite icing (chocolate preferably) and slap it on the cake if you wish. To keep the sugar & calories low, I usually skip the icing bit.
Cashew Raisin Cake - Recipe here. Bake at 350F in an 8 or 9 inch baking pan for about 32 minutes. I replaced half of butter with applesauce and used almond milk instead of regular milk. Turned out great! My husband ate 3 slices, even before the cake cooled down.
The keyword in the title is “try” :-) No compulsions, of course.
1. Lose the remaining 7 pounds. Enough already!
2. Visit India - Haven’t seen my friends and a lot of my extended family since almost 5 years. New nieces and nephews, sisters- in- law and brothers- in- law whom I haven’t met yet. Yeah, I’m a real slacker.
3. Visit a country other than India
4. Travel to Alaska next Summer
5. Adopt a more natural way of living - Conserve, recycle, re-use, and banish the remaining chemicals.
Squeeze some fresh lemon juice in a bowl. Take a piece of cotton wool, soak it in the lemon juice and then dab it all over your dry scalp, starting with the area that has the highest concentration of dandruff. Tie your hair and let the lemon juice work its magic for 1/2-1 hr. Shampoo and condition as usual. Follow this process about 1-2 times a week.
Before treating my scalp with lemon juice, I usually apply coconut oil, but this is not required.
